Our ingredients are sourced with the utmost care: fish delivered directly from Tokyo’s Toyosu Market through the integrity and support of our trusted suppliers, and rice cultivated by a private Japanese grower whose heritage dates back to the Edo period. Each element is chosen for its purity and character, ensuring harmony in every course.
